- You need 1 cup of pearl barley.
- Prepare 3 cups of water.
- You need 2 cubes of butter.
- You need 2 cloves of chopped garlic.
- You need 300 g of mushrooms.
- Prepare 200 g of spinach.
- Prepare 1 of small chopped onion.
- It's to taste of Salt and pepper.

Barley Risotto step by step
- Boil barley in water over high heat, after 1 boil keep it on slow for 20-25 mins or until done..
- In a pan, take butter put garlic and cook until it starts to get golden from edges..
- Add onions and cook for 2 mins.
- Put mushrooms and cook for couple of mins, add salt and pepper..
- Add barley (once cooked) and stir, add spinach, stir gently & add herbs.
- If you like creamy you can add some white wine too and some cheese..
